Origin & Production
About four-fifths of a truffle contains water and the remaining one-fifth are, amongst others, the proteins, soluble fats and minerals where the actual aromas and flavours arise from. The evaporation of water from the truffle is the culprit of the quick deterioration upon being picked out of its natural habitat in the soil.
truffle & our friends™ 99% near to fresh are produced through a highly innovative and unique method, in which the fresh truffle is freeze-dried in a vacuum cabinet. This extrudes the water that the truffle contains, while still preserving 99% of its flavour and the vast majority of its aromas. The process is solely technical and without chemicals, which leaves us with the same 100% natural product as from the start, only dehydrated to a fifth of its actual size.
There are so many delicate fragrances and flavours the very premium truffles in the Tuber family so it is nearly impossible to describe them all. You will find earthy, woody tones and scents of mild garlic and shallots in the Tuber magnatum pico and uniquely fragrant with clear woody, earthy notes, peppery to the nose with aromas like saffron, petrol and dark chocolate in the Tuber melansporum or Tuber macrosporum just to name a few. With the 99 % near to fresh, the vast majority of flavours and aromas is preserved and allows you to enjoy this seasonal product year-round.
Crumble the truffle over a very hot dish like a steaming risotto. Let it rehydrate from the steam for a few minutes, which will allow the truffle to release its unique flavour on its own.
Sliced truffles can be reconstituted. Reconstitute by using warm water and soaking until soft and tender then use in any recipe. Save the water in which the truffles have soaked, as it’s jus can be used as a part of a broth in soups or sauces to add a truffle flavour.

Shelf life & Nutrial
Shelf life: 18 months. Always make sure that the lid is securely fastened as this preserves the longevity of the delicate truffle.
