Origin & Production

The Carnaroli rice is often considered the king of Italian rice and it´s kernels are the longest and thickest of the superfino rice. The rice for truffle & our friends™ truffle risotto – trinity of kings comes from the fields alongside the heart of European rice production, Vercelli in Piedmont, Italy. Here, the canals flood the rice fields and then empty out, marking the seasons and landscape of this region. Our growers are mainly small producers with a shared philosophy that wholeheartedly values maintaining a sustainable environmental balance. This consideration arises from the sincere desire to protect and preserve the unique soil that is the real reason why this Carnaroli is considered to be the world’s best. The soil is strong enough to prevent the absorption of water into the ground when the growers flood the fields.

The Carnaroli’s long oval grain holds the highest concentration of starch, which helps keep its shape during the slow cooking, obtaining the most excellent texture for perfect velvety risotto. Concerning the thickness of the rice, it stays al dente even after cooking. Accordingly, it is the preferred choice when making risotto as the rice the star. The porcini mushroom (Boletus edulis) is also known as ”King Bolete”; hence we reckoned it to be the most suitable mushroom to pair with the king of truffles (Tuber magnatum pico) and the king of rice (Carnaroli) – a trinity of kings.

The porcini is organically grown in Šumadija, a very lush and fertile farmland in the middle of Serbia often referred to as the heart of Serbia. We use the medium sized porcinis that are usually brown or reddish-brown. When fresh, they have a slightly sticky texture, and their white flesh has a yeasty aroma that brings sourdough to mind. A great wealth of these aromas will remain upon flash-dry freezing them together with the white truffles. When later cooked, they will release a nutty, earthy flavour. White truffles typically come from the golden part of Istria, Slovenia, where today, you will without a doubt find world-class quality truffles.
